As a filipino, this particular dish just hits different, the sour ness and the salmon is amazing! As a kid whenever my friends asked me " what's your favourite food?"
And I would ALWAYS say "I like Sinigang"

This is my favorite Filipino dish!! My mom always makes it for me! It’s salty, sour, I’ve even tried some that’s sweet!
When I went to a pinoy restaurant with my friends family, I showed them all my favorite dishes from the Philippines. Seeing their faces as they enjoyed it made me so proud (despite me not knowing how to cook)

I wonder how it taste with salmon. We always use tuna or mackerel. The smaller tuna type of fish which are cheaper but same mouth feel. Because they have dense meat and won't fall apart when stewed. In fact, you can cook these types of fish in adobo with coconot milk until the bones are so soft that you can eat the fish, bones and all.
Pork version is my fav

My mom made some soup 3 days ago with imitation crab, salmon, shimeji mushrooms, leek, scallions, and garlic/bell peppers. Then on the side we've been having tortillas with Swiss cheese and pesto. Super savory
