Smoked Turkey Enchilada Soup Recipe ENCHILADA SOUP Olive oil (or butter) 1/2 onion, chopped 2 garlic cloves, chopped 4 cups chicken broth 3/4 cup masa harina + 1 1/2 cups chicken broth 12-14 ounces veleveeta cheese 1/ 4 cup corn 1/2 cup black beans 3/4 teaspoon cumin 3/4 teaspoon chili powder 1 chicken bouillon cube 1/4 cup tomato sauce 3/4 cup enchilada sauce 1 1/2 cups turkey, chopped Tellicherry pepper Heat oil or butter in pan. Stir in onions and cook until soft. Add in garlic, stirring for 1-2 minutes. Add in chicken broth and stir. In separate bowl, mix together masa harina and chicken broth until smooth. Once chicken broth and onions start to boil, stir in masa harina mixture. Add in remaining ingredients and cook until cheese is melted and smooth. Top with shredded cheese and crushed tortilla chips if desired.
