  1. Rutabaga is my go-to potato replacement. I can usually get 2 meals out of one. They take FOREVER to cook through, so I usually peel and slice or dice them, and boil in salted water with vinegar or lemon juice for at least an hour. Then I can drain and use immediately, or freeze for later. Rutabagas gratin with bacon is excellent.
