Watercress Soup is so simple to make, and my ingredients are super simple too. I added jujubes (dates) for color and sweetness. You may substitute with slices of carrot. Enjoy!

1/3 lb seafood mushroom or other mushroom
4 jujubes (dates)
3 stalks green onions

  1. I made this soup yesterday! I found the jujube at my local H-mart. It was amazing. Perfect enough for 3 people. It was gone last night. This morning for breakfast I made it with fresh broccoli instead of watercress. I added garlic to and made the soup as directed. It's 10:44 here in PA and it's gone already.

  2. Looks very delicious, I never tried it before with watercress. I have blended watercress with a little bit of water (blend until watery)drain it and add orange juice (no pulp)and drink at room temperature. Its good for clearing up your lungs, its also good for when you have a cold. But I will definitely try your soup, and I most definitely subscribing to your channel. ❤❤🙏🏽🙏🏽

    I like seeing old vegan recipes from other cultures before people started eating so much meat and dairy.
    I'm mexican on my moms side and most of the food/dishes that my grandma and mom would eat before they came to America were completely vegan.
    Such as mexican rice, Bean tacos, guacamole, many salsas, potato enchiladas, bean enchiladas, nopale salad, lentil soup, mexican style potatoes w/ potato and onion, chayotes, Calabacitas, tropical fruits such as Cherimoyas, bananas, mangos, guavas, avocados and Papayas. Many of the desserts were vegan too like penole, chocolate covered bananas, and buttery pastries that used margarine. Before western insurance dairy at all and there was almost no red meat in mexico. Things have changed since then and a lot more since my mom was a child in the 60s and 70s there.
