Ingredients:

1.5 kg / 3.3 lbs zucchini
1 bell pepper
6 cloves of garlic
2 tbsp sugar
3 tbsp vegetable oil
250 g / 0.57 lbs tomato paste
Salt to taste
Add your favourite mixed-up pepper seasoning
1 tbsp white vinegar

  1. Zucchini is such an underrated vegetable, I think. And we love zucchini because it is so simple to make any quick super healthy vegetable dishes with it. Please try this recipe and adjust all the spices and seasonings, however you prefer. You can even eat this dish as a spread on your toast, it is equally good when cool or warm. Yum!
