southeast asian salmon soup I’m not really sure what to call this but it’s definitely in the realm of Hmong/Lao/Thai food because of the ingredients used. The base of this recipe uses salmon heads and bones which are usually very cheap at the grocery store. It really adds so much flavor to the broth and you can pick off the meat when it’s done cooking. I also know galangal and lime leaves are hard to find, but it really makes a difference in elevating the flavour. — written recipe 📝 shopping list salmon (bones + head included) chicken broth lemongrass ginger bay leaves galangal lime leaves white rice birds eye chili (thai chili pepper) salt + fish sauce chili oil cilantro + lime scallions written recipes link to ingredients instagram 🍵 .

How does it end up getting that red-ish hue? 😮 I've watched the video several times and haven't figured it out… Did you maybe add chilli oil or something like that when you weren't filming? Or is it from the salmon?

Salmon head is notoriously fishy. It needs some proper aromatics to offset that taste.
How did you make the gelatinous chicken broth? I would love a recipe!
