Roasted SWEET POTATO SALAD with Best Dressing

This homemade Roasted Sweet Potato Salad has all the best flavors of Fall. It’s loaded with kale, creamy sweet potatoes, crisp apple, crunchy pecans then topped with the best maple vinaigrette dressing.

SWEET POTATO SALAD INGREDIENTS:
►1 1/2 lbs (2 medium or 3 smaller) sweet potatoes,
►1 Tbsp olive oil
►1/2 Tbsp maple syrup
►1/2 tsp sea salt
►1/4 tsp black pepper

►1 bunch kale, (10 cups chopped)
►1 Apple, thinly sliced
►Pecans, lightly toasted if desired
►1/2 cup dried cranberries or Pomegranate Seeds
►2 oz Goat Cheese (1/2 cup crumbled)

SALAD DRESSING:
►3 Tbsp apple cider vinegar
►1 Tbsp maple syrup
►1 Tbsp dijon
►1 garlic clove, minced
►1/3 cup extra virgin olive oil
►1/2 tsp Salt
►1/8 tsp black pepper

  1. I clicked on this video because I was intrigued by sweet potatoes in a salad, then almost went away when I saw the kale. (I never know what to do with those big fat stems, but I see that you can strip the leaves and toss the stems in the corner, mindful that some may come flying back). I stayed to watch because your antics brightened my day. Now, I think I'm really going to try this salad! BTW, I LOVE goat cheese. Before I tried it, I couldn't get past the thought that goats eat tin cans (from a cartoon I saw thirty years ago). I finally tried it. It was so good I look for excuses to use it. Thanks for the recipe and the entertainment!
