INGREDIENTS AND NOTES:

#1 Vegan Kimchi Grilled Cheese 0:29

1 tbsp vegan butter or oil for the pan
2-4 slices of bread
per sandwich:
a layer of hummus or vegan cream cheese
1-2 tbsp vegan kimchi
1-2 handfuls shredded vegan cheese
1 handful baby spinach
optional: thin slices of smoked tofu!
optional: serve with a drizzle of sriracha, and a sprinkle of sesame seeds

#2 Mushroom & Peanut Curry 2:03

1 1/2 cups oyster mushrooms (150g)
1 tbsp oil
2 cloves garlic
a generous pinch of seasoned salt (or reg salt or any spice mix u wanna add)
1 tsp red curry paste
1 heaping tbsp creamy natural peanut butter
⅓ cup (80ml) vegetable broth
⅓ cup (80ml) oat or soy milk
1 tsp white wine vinegar or lemon juice
1-2 tsp soy sauce
salt to taste
1-2 spring onions, chopped
i topped this w extra sesame seeds and a pinch of chili flakes

serve w 1-2 servings of rice or glass noodles

→ serves 1

#3 Vegan Carbonara Type Meal 4:00

150g spaghetti (5.3oz)
salt for the pasta water

100g smoked tofu (3.5oz)
1 tbsp olive oil for the tofu
1 tbsp chickpea flour
100ml (⅓ cup + 1 tbsp) oat or soy milk
1 tsp white wine vinegar
~ 1 handful frozen peas
2 tbsp vegan butter
3 tbsp vegan parmesan*, more if needed
salt and pepper to taste

→ serves 2

*Make your own vegan parmesan by blending up:
1 cup (140g) raw cashews or almonds
1 tsp salt
1 to 2 tbsp nutritional yeast
1⁄4 tsp garlic powder
1⁄4 tsp onion powder

#4 Caesar Chickpea Salad Wraps 5:18

for the filling:
1 can (14oz or 400g) chickpeas, drained
200g (7oz) plain tofu
2 tbsp plain soy yogurt
1 ½ tbsp plain hummus
1 tsp mustard
2 tsp olive oil
1 tbsp soy sauce
1 tbsp white wine vinegar
salt to taste
vegan parmesan to taste

for the wraps:
medium tortilla
lettuce
tomato, sliced
a few tbsp of the filling
vegan cheese, optional
sriracha, optional

→ this recipe yields enough filling for 5-6 wraps, the filling can also be added to bowls, salads, sandwiches … you can pan fry it , eat it cold etc. !

#5 Sweet & Spicy Tofu Veggie Bowl 7:15

200g (7oz) plain tofu, pulled into chunks
1 1/4 tbsp corn starch
¼ tsp vegetable broth powder or other seasoned salt of choice
pinch of kala namak
1 tbsp veg oil

1-2 handfuls mushrooms, roughly chopped
2 shallots
lil bit of oil
2 tbsp vegan kimchi
2 handful baby spinach
1-2 tsp soy sauce
1 tsp sesame oil
1 tsp white or rice wine vinegar

for the sauce:

1 heaping tsp gochujang
1 tbsp soy sauce
1 tsp olive oil
1 tbsp white wine vinegar
2 tsp agave or maple syrup (forgot to mention!)
1 tsp bbq sauce

1-2 servings cooked rice , quinoa or couscous
In a small bowl I combine 60g couscous plus 1 pinch of salt, then I add just enough hot boiling water till the couscous is just covered (about 90ml). Letting the grain absorb the water for 6-10 min.

  1. Hi Mina! I m a follower since your very firsts videos, years ago. I m pretty curious about what you think of vegan cheese with fat of coconut, and what are the best ingredient's "base" of vegan cheese we can buy on the market (I m italian living in brasil).. I don t eat any kind of dairy and I found almost the vegan cheese very heavy for the liver and I m looking for a good and the most healthier option. Thank you in advance !

  2. My faaavorite way to eat wraps recently has been like this: Fry bell peppers with garlic & Italian herbs, when they're halfway done, add corn and then leftover rice and mix it. I make like a salsa kinda mix of chopped cucumber, tomato and radish & add some herbs like parsley or whatever you have. When building the wrap I start with a layer of sauce (lately I've been obsessed with a store-bought Hawaiian sauce) then add the rice mixed, sprinkle over some cheese, add the salsa mixture, a little more sauce, some iceberg lettuce and a few pieces of tortilla crisps (game changer!) Then roll it up and of course toast it. it's SO good!

  4. Hiii I love your recipes! I made the carbonara type meal, but for me it just kind of tasted like the chickpea flour. I followed every step and added a lot of salt and chili but I think it didn't work properly. But I'll be trying more of these ideas soon 😊

  5. loved these recipes! i was wondering if you (or anyone reading this really) have any tips or ideas for more protein-rich meals? currently trying to balance eating vegan more often while also working out 5 times a week. it's a work in progress 🙂
