My 3 fav of all time vegan soups that are super easy, healthy, nutritious & comforting! Great to take at work or school as well in lunch box! RECIPES :
1. SPICY LENTILS SOUP
Ingredients : 1 cup dried red (coral) lentils, 1 onion, 1 small can coconut milk (full fat) 2 tsp cumin, 1 tsp cinnamon, 1 lime (juice), 1 can tomatoes (or fresh), garlic salt, pepper.
Instructions : Chop the onion, then add the spices and garlic, brown it on high heat for 5 min (no oil required). Add rinsed lentils, tomatoes and 1.25L of water. Bring to boil, simmer for 15-20 min until lentils are cooked and soft. Add lime juice, coconut milk and blend ! Enjoy with rice

2. GINGER BUTTERNUT
Ingredients : 1 squash, fresh ginger, nutritional yeast (optional), water
Instructions : Peel, chop roughly the squash. Add a good inch of ginger. Steam it (add a bit of water to the bottom of the pan, for about 15 min till soft). Blend everthing + nutritional yeast and adjust with water to suit your taste. Salt is optional as ginger is really enough! Also, I LOVE roasting the butternut it makes this soup even better! Goes well with the toasted pepitas (seeds + paprika + nutritional yeast + garlic on grill for 7 mins! Best snack everrrrr)

3. CUMIN CARROTS
Ingredients : 500g carrots, 1 or 2 tbs cumin, 1 onion
Instructions : Simply peel and chop carrots and onion. Cook it on medium heat. Blend, then serve with fresh coconut milk/cream and homemade garlic croutons !
