Wild Rice Soup! A healthy and delicious comfort meal! Packed full of veggies and really easy to make!

Recipe

3 tbsp butter
1 yellow onion
3 cloves garlic
5 stalks celery
4 carrots
8 oz mushrooms
Splash of white wine around 1/4 cup
1/4 all purpose flour
5 cups veggie broth
Fresh herbs : sage, thyme & rosemary
Salt & Pepper
1 cup wild rice
3 stems kale stem removed and chopped
1/2 cup heavy cream
Parmesan for on top

Start by chopping all of your vegetables. Melt butter in a pot and add onion and garlic. Sauté for 5 minutes. Add carrots, mushrooms, and celery. Sauté for 5 minutes and then add wine and cook for 2-3 minutes. Add flour and cook for 1-2 minutes. Add broth, herbs, and rice and season with salt and pepper. Cover and simmer for 40-60 minutes until the rice is cooked through. Add kale and cream and stir in. Cook for a few minutes until kale is tender. Taste seeing if you need any more salt or pepper. Add to a bowl and top with freshly grated parmesan. Enjoy!
