Lemon Rice!!! as the name suggests this rice is bursting with lemon flavor. This is a very popular south Indian cuisine, it is a perfect blend of steamed rice, lemon juice and seasoned with lentils and nuts and garnished with coriander leaves. The turmeric powder gives this beautiful golden color to the dish. Its very easy to make. So lets dive in…..
1 C Basmati rice
(Wash the rice, add 1-1/2 cups of water and pressure cook for 2 whistles and let it cool completely)
1/2 tsp Mustard seeds
1/2 tsp Channa dal
1/2 tsp Udad dal
1/4 tsp Turmeric powder
2 tbsp Oil
2 tbsp dry roasted and chopped peanuts
1/4 C chopped coriander leaves
Heat a pan, add 2 tbsp of oil, when the oil is heated add mustard, udad dal, channa dal, cashew nuts, sautee for few seconds, add turmeric powder and curry leaves. Sautee until the dal is golden brown, now add the cooked rice, salt and the peanuts. Squeeze in the lime juice, add coriander leaves and mix everything thoroughly.
You can enjoy the lemon rice with coconut chutney or just by itself.
