Hi friends!

Today I’ll be sharing with you how I create my vegetarian/vegan soup at home… Spanish style! A perfectly delicious recipe for those rainy days or when you’re feeling under the weather. Ingredients listed below! 🙂

Veggies:

Stalk & 1/2 of CELERY
5 small RUSSET POTATOES
Small handful of BABY CARROTS
Some CALABASA SQUASH
Small handful of GREEN PEAS
Some SPANISH ONION
2 cloves of FRESH GARLIC
GOLDEN CORN / CORN ON THE COB or some Mixed Veggies w/ corn 🙂

Spices/Seasonings for the Broth:

2 containers of VEGETABLE BROTH
1/2 can GOYA TOMATO SAUCE
2 GOYA SEASONING PACKETS (Sazon / Salad&Vegetable / ECT.)
Bay Leaves
Black Pepper
Lemon Pepper Seasoning
Cayenne Pepper
Onion Powder
Garlic Powder
Paprika
Ground Annatto
Salt Free Seasoning
(Olive or Vegetable) Oil
Your Homemade Sofrito
Fidellos
