This Protein Loaded Vegan Salad is a great recipe for those of us that are a bit older in their senior years and require a bit more protein, and also for athletes. It is something I will be adding to what I eat in a day as a plant based vegan.
I am learning so much about grains and seeds that I had not even heard off before and tasting and trying so many new ingredients in order to not only broaden our food variety, but also nutrient and micronutrient exposure. This is my second buckwheat recipe and I am super happy with both ways it came out in a hot dish and now in this salad. Hope you enjoy the recipe as much as I did and give it a go.
