  1. This looks and sounds delicious, but may I ask why you did not peel the broccoli stem and chop that up for the soup also? So many people seem to waste the stem which has so much flavour and is full of vitamins. Once the tough skin has been peeled on the broccoli stem, just cut it up and sauté with the veg or add about 10 mins after the potato if you do not want them overly soft.
    If folks are looking to make meals go further and to be affordable, they really must stop wasting food like only using the florets from the broccoli, or throwing out the broccoli and cauliflower leaves which are also edible and full of flavour and goodness. Save all your peelings, tops and bottoms of your veg and herb stems to make veg stock/broth (keep in the freezer until you have enough to do so).
