Oh, wow! Thanks! I used to make a veggie omelet with Just Egg and roasted veggies. It was time-consuming and often messy when folded. Your recipe, parchment paper, a pie pan, and pre-roasted veggies and I can have a beautiful hands-off omelet in 7 minutes!

I have been making mung bean eggs and pepita eggs for sometime now, but I like the idea of adding aquafaba to the mix. Also a great idea with the oven. Thanks

I like to soak 2 parts split mung beans to 1 part pumpkin seeds to make omelette. If you added the aquafaba, you could possibly make scramble. I never thought of baking it. I always just sprinkle the black salt after done, as it seems to dissipate when added before.
If you cannot find split mung beans, can you use sprouted mung beans? Thanks for an awesome recipe!!

I made a recipe like this but with only shelf stable ingredients. After I dried the mixture and than processed it into a powder.
To use it I mix with some water + black salt and let sit for 20 minutes.
It’s basically a shelf stable instant no egg powder 😊
