  1. Oh, wow! Thanks! I used to make a veggie omelet with Just Egg and roasted veggies. It was time-consuming and often messy when folded. Your recipe, parchment paper, a pie pan, and pre-roasted veggies and I can have a beautiful hands-off omelet in 7 minutes!

  2. This is great, thank you! 🎉 I love Just Eggs and never thought to try to make a home-made version. I am looking forward to trying this. Also, fully resonating about letting eggs go as one of my hardest parts of going plant based (though so relieved to not eat them now). Love this alternative!

  3. I like to soak 2 parts split mung beans to 1 part pumpkin seeds to make omelette. If you added the aquafaba, you could possibly make scramble. I never thought of baking it. I always just sprinkle the black salt after done, as it seems to dissipate when added before.
