When I went plant based over 8 years ago I found my morning eggs were the toughest thing to “give up”. I had eaten 2 eggs a day for most of my life. This plant-based vegan scrambled eggs recipe is similar to the Just Egg product but it is healthy, oil-free, and tastes delicious.

Jill, you are a genius and a treasure.
Oh, wow! Thanks! I used to make a veggie omelet with Just Egg and roasted veggies. It was time-consuming and often messy when folded. Your recipe, parchment paper, a pie pan, and pre-roasted veggies and I can have a beautiful hands-off omelet in 7 minutes!
Yummy and delicious ❤❤❤❤
I was actually trying to find a recipe for vegan scrambled egg without tofu lol thanks Jill
How about something Middle Eastern or something Japanese for your next recipe I give you some ideas and suggestions ❤❤❤❤❤
Ooo! I want to try this one. And I am on the edge of my seat to hear an update on your 2nd Cookbook!!!
Hi Jill, thank you I love your recipes. I bought a book and I got a💖💖💖
Do you wash the beans? Because if you do, you didn't go through the motion.
nice video !!
You forgot the pepper to go along with the turmeric
What a good idea! I'll have to try this.
I have been making mung bean eggs and pepita eggs for sometime now, but I like the idea of adding aquafaba to the mix. Also a great idea with the oven. Thanks
I can’t tolerate aquafaba. Is there anything else I can use instead?
This is great, thank you! 🎉 I love Just Eggs and never thought to try to make a home-made version. I am looking forward to trying this. Also, fully resonating about letting eggs go as one of my hardest parts of going plant based (though so relieved to not eat them now). Love this alternative!
Can't wait to try this!!
Jill thanks so much for this video! I too missed eggs in particular when I went WFPB, and this looks like a great way to enjoy some old familiars without the fat in tofu.
Wondering if yellow split peas can be used ???
I like to soak 2 parts split mung beans to 1 part pumpkin seeds to make omelette. If you added the aquafaba, you could possibly make scramble. I never thought of baking it. I always just sprinkle the black salt after done, as it seems to dissipate when added before.
If you cannot find split mung beans, can you use sprouted mung beans? Thanks for an awesome recipe!!
My mouth is drooling Jill thank you so very much thank you for taking time to teach us many thanks may the good Lord bless your family nd many years to come
I made a recipe like this but with only shelf stable ingredients. After I dried the mixture and than processed it into a powder.
To use it I mix with some water + black salt and let sit for 20 minutes.
It’s basically a shelf stable instant no egg powder 😊
