Pinto Bean Soup | Vegetarian Soup

easy and healthy pinto bean soup!
recipe
heat 2 tablespoon oil over medium heat
1 medium size onion diced
cook until translucent
2 tablespoon minced garlic
1 teaspoon chopped green chili
cook 1 minute
1 tablespoon ketchup
salt to your taste
1/2 teaspoon black pepper
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon dried oregano
1 teaspoon red chili powder
cook spices 30 seconds
1 can diced tomatoes 14.5 ounce
mix and cook 1 minute
1 can 14.5 oz pinto beans – rinsed and drained
3 cups chicken and vegetable broth
mix
bring to a boil
once boiling reduce the heat to low and cook 20 minutes
cover with lid
blend 1 & 1/2 cups of the beans in a blender
add blended mixture back to the pot
mix and adjust salt if needed
garnish with cilantro
