  1. This is basically my favorite way of preparing potatoes. Sometimes I make fries, sometimes little chunks but it's always delicious. The key is to use the right variety of potatoes, one that is well suited for baking, so it becomes soft on the inside and crispy on the outside. If your patatas bravas or home made fries turn out mushy and dissapointing, try a different variety of the vegetable.

  2. i like that you mention vegan alternatives. some vegan groups, such as "forks over knives," advocate not using oils. even the oils that are most healthful. so i don't know how to modify the recipe. i'm guessing i'll just reduce the amount of oil. and eat my whole olives with the dish!
