RECIPE (6-7 servings, 60minutes prep time)
Filling:
-250g soy chunks
-2 1/2 cups (625ml) water
-3 Tbsp soy sauce
-1 Tsp cumin, smoked paprika, paprika
Cook on high heat until the water has been absorbed.
-1 onion
-2 cloves garlic
Fry in oil before adding the cooked soy chunks.
-1 Tbsp paprika
-1 Tsp cumin
-salt to taste
-a splash of water
Simmer for 10-15 minutes
Top layer:
-450g corn (fresh or frozen)
-2 Tbsp vegan butter
Fry for 2-3 minutes
-1/2 cup (125ml) non dairy milk
-a handful fresh basil
-salt and pepper to taste
-1 Tsp paprika
Cook 5-10mins.
Blend until it’s a chunky mixture.
-2 Tbsp corn flour
Stir it in and taste (in case you have to adjust seasoning).
Fill the “meat” in a baking dish, add a handful of raisin and spread the corn mixture.
Bake at 400F/200C for 25-35minutes.
