PANERA’S COPYCAT CREAM OF CHEDDAR BROCCOLI SOUP⎜VEGAN AND YUMMY!
INGREDIENTS:
1 tablespoon of olive oil
2 tablespoons of vegan butter (recipe below)
1 diced onion
1 bay leaf
1 minced garlic clove or my garlic blend (recipe below)
3 grated carrots
4 tablespoons of all-purpose flour
4 cups of veggie broth
salt to taste
black pepper to taste
1/2 teaspoon smoked paprika
a few drops of liquid smoke
1lb broccoli florets chopped
1 tablespoon of olive brine
2 tablespoons of nutritional yeast
1 1/2 cup of unsweetened plant-based milk plus 1/2 cup of vegan cream
a pinch of yellow food coloring or turmeric powder
a few drops of lemon juice
METHOD:
In a large pot, on medium heat, add the olive oil and vegan butter. When it melts add the minced onions, let it saute until lightly golden.
Add the garlic and the carrots and the bay leaf, lower the heat and saute for 5 minutes.
Add the flour, the salt pepper, and smoked paprika, stir for 3 minutes.
Add the veggie broth, the nutritional yeast, and the olive brine, the turmeric or food coloring, then add the broccoli florets, let it cook until the broccoli has softened up.
Add the plant-based milk and cream, turn off the heat, and serve it!

Dear Chef Jenna : When you said Vegan Cream needs to be used at the end with plant based milk. Do you mean Vegan Cream Cheese ? Please advice. thanks!

A very hearty soup for autumn. Pumpkin puree gives a nice yellow colour to the soup in addition to creaminess and sweetness 🙂

If you saute the turmeric with the flour it will eliminate most of that sensation.

This was so good! I didn’t have any olives so I used a tablespoon of pickle juice because I have used that in vegan Caesar dressing before. The soup is really delicious and it tastes like broccoli cheddar. I did overcook the broccoli though because I got distracted 😆.

Omg Janna, you always make my mouth water whenever I watch one of your videos. I make a soup similar to this, but have always used potatoes instead to thicken it and then zap it into a porridge afterwards. Hmm I'll try the liquid smoke and lemon next time. QUESTION: I don't always have fresh lemons hanging around, but could I still use the concentrate? Ciao
