Nourishing Smoothie Bowl
2 bananas (fresh or frozen)
2 cups of berries or fruit of your choice (fresh or frozen)
optional 2-4 stevia sweetener drops or sweetener of your choice
1 tbsp coconut flakes (use organic unsweetened)
1 tbsp chia seeds (optional)
some almonds, nuts or dried fruit
1 sliced fresh banana
1 handful of fresh berries or other fresh fruit of your choice
1. Blend up the fresh or frozen bananas & berries/ fruit until smooth.
2. Taste for sweetness and optionally add a soft pitted date or stevia sweetener drops or a sweetener of your choice.
3. Pour into a bowl and top with fruit chunks, banana slices, nuts, seeds, and dried fruit.
Banana Oat Cookies
4-5 ripe Bananas and 2 cups organic old fashioned oats
I like to blend 3⁄4 cup of oatmeal into flour, that way the cookies are a little more chewy and seem to stick together even better.
Peel and mash your bananas and mix them with the oat flour and oats.
Then add any of the following ingredients:
– 1/3 cup Medjool dates (cut into pieces), 1 tsp cinnamon, 1⁄2 tsp cardamom (ground), seeds of 1 in of vanilla bean 1⁄2 cup organic chocolate chips (white or brown) or
– 1⁄2 cup organic raisins, 1 tsp cinnamon or
– 1/3 cup organic chocolate chips, 1⁄4 cup almonds (cut into
pieces), 1⁄4 cup shredded coconut (unsweetened)
Mix all your ingredients and spoon onto a lined cookie sheet. Bake at 425 degree Fahrenheit for 20 minutes or until cookies start to brown at the edge.
1 and 1/4 cups Flour (we use GF or Sprouted Wheat)
1 Tbsp Baking Powder
1/4 tsp Salt (optional)
2 Ripe Bananas, (1 cup mashed)
1/4 cup Plant Based Milk as needed (depending on the type of flour you use)
1. Blend up the bananas in a blender and add all other ingredients.
2. Pour batter onto hot griddler or non stick pan (optionally use a tiny oil before frying the first pancake to prevent sticking).
3. Bake until browning underneath and bubbling on top. Flip and bake the other side.
Serve with sweet toppings of your choice.
