FIESTA BAKED COD
Serves: 4
1 pound cod filets
2 tablespoons avocado oil, olive oil or melted butter
1/4 cup balsamic vinaigrette
4 oz Rotel, drained
1/2 cup shredded sharp cheddar cheese

1️⃣ Preheat oven 425 degrees. Pat cod filets dry with a paper towel and add to the bottom of a square baking dish. Seasoning with salt.
2️⃣ Evenly pour balsamic vinaigrette over the cod. Top with Rotel. Sprinkle shredded cheese all over.
3️⃣ Bake in the oven at 425 degrees for 10 minutes or until the fish is cooked through.

KETO BEEF & BROCCOLI
Serves: 4

1/4 cup avocado oil
1 1/2 pounds ground beef
dash onion powder
2 cloves garlic, minced
1/2 cup soy sauce, tamari or liquid aminos
1/4 cup sesame oil
4 teaspoons apple cider vinegar
12 oz broccoli florets

1️⃣ Add avocado oil to a skillet and heat over medium high heat. Add ground beef and break up into small chunks. Cook, stirring occasionally until beef is browned and slightly crispy. Add onion powder and garlic. Stir for 30 seconds.
2️⃣ Stir in soy sauce, sesame oil and vinegar.
3️⃣ Stir in broccoli florets. Cover and let steam over medium heat until broccoli is fork tender (3-5 minutes)

  1. I just found your awesome channel. First of all you are darling and I really really enjoy your style. I keep going back to your channel when I should be doing things like housework, laundry, etc… Looking forward to seeing everything!

  2. I call cod my "stinky fish dinner" bc it's a fatty white fish which makes my house smell but oh my, it is so delicious & worth it! I usually bake it with Greek seasoning & citrus essential oils & butter. If I can get it fresh, marked down, that's a bonus, but I do keep frozen as well.
    The beef & broccoli – I'd have to cut up the broccoli – is also great with broccoli slaw or a pkg of stir-fry veggies found in produce section (just don't use more than a couple tablespoons of the included sauce, if using any, bc the sugar content is extreme). Cabbage is also quick & easy to cut up, use some diced tomatoes & italian seasoning, s&p, and have deconstructed cabbage rolls fast.
    With all the food prep I do for keto eating, it's really nice to have quick meals available!

  3. I hate all the keto rice substitutes! Cauliflower etc! They taste awful! I still have a box of shirutaki rice in my cabinet! Can't do nothing with it. So I just give up on the rice. I do love your recipes though! I've repeated many of your baking recipes! Thanks!

  4. Can't wait to try the fish! I laughed at your comment to use aminos "if you think soy is the devil." Lmao!! Do you have any recipes using canned mackerel? I bought it because it's high in omegas but have been afraid to open the can and I don't know if you just use it like tuna or what ☹️
