🌱Leek Soup✨

1 lb sliced Leeks
2 tbsp Butter
1/3 cup White Wine
2 tbsp minced Garlic
4 cups Beef or Chicken Broth
1/2 cup Milk
1/4 tsp Cheyenne Powder
1/4 grated Parmesan
3 Bay Leaves
1 sprig of Thyme
Salt & Pepper

1. In a pot, sauteé leeks in butter on medium heat. Once leeks have reduxed to half the size add garlic. Cook for another 1-2 minutes
2. Add wine to deglaze the pan. Add bay leaves and thyme. Cover and let simmer for 15-20 minutes.
3. Remove herbs, add milk and Parmesan along with the remaining seasonings. Blend half for a smoother/creamier texture (optional).
Serve with a drizzle of olive oil and freshly grated Parmesan 😁

  1. My mom makes it a different way, it is completely puréed with potatoes and other assorted vegetables like carrots, celery, etc, and comes out to a yellow/green color. The taste is just indescribable. Every time I eat it I feel like that old grumpy food critic from the Disney movie “ratatouille” who sees his entire childhood flash through his eyes while tasting that dish. That’s kind of how I feel. It’s one of my favorite recipes to this day. This looks great too and I would like to try it as well
