KETO TORTILLAS
(makes eight 4-inch tortillas)
½ cup almond flour
⅓ cup lupin flour
1 tablespoon xanthan gum
½ teaspoon salt
6 tablespoons water
1️⃣ In a small bowl, combine almond flour, lupin flour, xanthan gum and salt. Pour in water and mix until dough forms. The dough should feel similar to play-doh.
2️⃣ Divide dough into 8 balls to make mini tortillas (4”) or 4 balls to make 6” tortillas.
3️⃣ Flatten into a tortilla using a tortilla press. Sandwich a ball between two sheets of parchment paper and press down to flatten. Can flatten using a rolling pin as well.
4️⃣ Place a tortilla in a skillet heated on high heat. Cook for 30-60 seconds or until the underside starts to turn brown in some spots. Flip and cook the other side for 30 seconds. Remove from skillet and place back on parchment paper to cool.

I struggle with almond flour being gritty. Any suggestions
Have you ever found success with freezing these? If so, would you say the consistency of the tortilla is the same, or does it degrade after thawing? It's easy to freeze the Mission tortillas and if these work out the same, then win win!

When almond flour is heated, trans fats are produced. Very harmful to health. In addition, the peroxide number and aniside number (harmful aldehydes) exceed the standards by 7 and 20 times. It's poison.
Almond flour is only safe when you don't heat it.
The same goes for other nuts that are roasted. They are poison.

Can I use glucomanna instead of xanthan gum? I hate the slimy feeling it gives to dough and a tablespoon is a lot!
I suggest lupina lupin flour, I bought Anthony's bc I was having trouble finding lupina, Anthony's is extremely bitter and with my husband it affected his blood sugar. Apparently it has to do with how Anthony's processes their flour. Lupina is a lighter yellow and milder flavor no bitterness
If you are allergic to soy, almonds or peanuts chances are you allergic to lupin. I had to check with my physician and suggest anyone thinking of using it do the same.

does the lupin flour matter? or can it be more almond flour or coconut flour?
La Tortilla Factory has "zero net" carb tortillas. They taste good to me although I'm dubious of their claim of zero net carbs. Any thoughts on these? Your tortillas look nice but I've purchased so many low carb flours, other ingredients and cooking tools over the past few months I can't afford any more right now.
