Recipe for My Simple Chicken Soup
4 skin on bone in chicken thighs
2 carrots diced
2 celery stalks diced
1/4 onion diced
1/2 bag 7.5 oz vermicelli(fideo)
1 1/2 tsp garlic powder
1 tsp pepper
1 tsp cumin
1/2 tsp salt
1 cube chicken bouillon
8 cups water

in a pot bring water to boil. add in clean chicken thighs
and a dash of salt if desired. Allow to chicken thighs to cook
about 15 minutes covered. As it cooks remove any scummy bits
and fat from broth. I rinsed and trimmed any bits of fat and
extra skin from thighs and rendered very little scum or fat
floating in my broth. You can always strain your broth as well
but remove thighs first. Set thighs apart so they can cool off.
Meantime add all the seasonings, carrots, celery, and onions to broth
and allow to cook about 7 to 8 minutes covered. Remove the skin,
bones, and shred chicken. Check your veggies if tender enough
and adjust seasoning to taste. For the last 7 to 8 minutes add
the fideo pasta to the pot and cover again till the vermicelli
(fideo) is cooked to your liking. You can always add any other
veggies such as diced potatoes, tomatoes, and season with any
other flavor you like. I made my soup simple so I could enjoy the
flovorful broth while getting some nutrients to feel better on a
cold night. Make it your own and enjoy! 4 servings
