Brussels sprouts have started their glow up from being boiled and served whole while smelling like sulfur to now the only recipes you see seem to slice them in half to be roasted or sauteed, however my favorite new way, at least new to me, is to thinly slice them for salads.

***Sweet Potato + Goat Cheese Salad***
– 1 bag of Brussel Sprouts, thinly sliced
– 1 poblano, roasted & diced
– 1/2 avocado, diced
– 56 g Monterrey jack, small cubes
– 60 g canned black beans, drained
– Handful of pickled onions
– Toasted cumin seeds
– Salt to taste
**Cilantro Lime Vinaigrette Dressing**
– 3 parts of oil
– 1/2 part mayo (optional)
– 1 part lime juice
– 1/2 chile in adobo, minced (optional)
– Minced cilantro
– Salt
***Southwestern-ish? Salad***
– 1 bag of Brussel Sprouts, thinly sliced
– 1 sweet potato, small cubes, and roasted. 75 g
– 60 g walnuts, toasted
– 56 g goat cheese, crumbled
– 1/4 red onion, sliced half-moons
– Salt to taste
**Honey Lemon Vinaigrette Dressing**
– 3 parts of oil
– 1/2 part dijon mustard
– 1/2 part lemon juice
– 1/2 part vinegar
– 1/2 part honey
– pinch of lemon thyme, minced *(optional)*
– Salt

I've been saving time lately by just dumbing the bag of brussels into my ninja blender, give it a few pulses and then sautéing them. this method would work for your salad as well, saving chop time chasing around rolling sprouts.

Some people know this as "cole slaw". It's much easier to just chop up cabbage, and you can combine red and green for a nice contrast.

Brussel sprouts are amazing in soups, just cut off the end, cut into halves or quarters, and let the leaves fall apart in the cooking process. That, and celery leaves have been a great greeny and flavourful addition to many a ramen, noodle, or vegetable based soup.
Wait Brussels sprouts are hard at the center and the root end. You’re telling me I can chop these super fine and not have to grill/fry them?!? I feel as if the root would be very crunchy and hard to eat. Hmm I’ll give it a try. Looks amazing.

You almost had me there, but then I realised it was healthy.
Important question, are the sprouts steamed/cooked or are they "raw"? Ive read somewhere that they arent easily digestable… Soo would you say the Same or am I misinformed?
I love brussels sprouts, so I hate seeing these precious babies wasted to make cole slaw. All those salads sound wonderful, but I’d use cabbage and save my expensive brussies for roasting.

Gives us the Side veg, Crunchy, Creamy, flavor formula to follow, even gives it an acronym and proceeds to IMMEDIATELY disregard the formula by not adding a crunch component to the first salad.
My favorite way to use them is to leave them in the grocery store for other people to gag on.

It looks like you might have trimmed the outer darker leaves from your sprouts off first. If so, you can bake those with a bit of oil and salt to make some tasty chips
