  1. VIET CHIVES TOFU SOUP (CANH DAU HU HE)⤵️

    3.5 qt broth of choice (I used pork bone broth)
    1 block of firm tofu, cut into cubes
    1 lb shrimp, peeled and deveined
    2 tomatoes, cut into wedges
    1 bunch of chives, cut 1 inch
    Fried shallots

    1. Prep all of your ingredients— chives, tomatoes, tofu, shrimp

    2. Bring 3.5 qts of broth to boil. If you want to keep this vegan, use vegetarian broth. I used pork bone broth. You can also use chicken broth.

    3 Once boiling, add your tofu and bring back to boil

    4. Once boiling, add shrimp and tomatoes. Bring it back to a slight boil.

    5. Once its about to boil, add your chives, black pepper and fried shallots. Immediately turn off heat.
