Mixed Vegetable Soup Recipe – Cheesy Croutons | Healthy Vegetarian Soup | Mix Veg Soup

Ingredients :
1/2 tsp butter + more butter to apply on bread slices
1/2 spoon cumin seeds (jeera)
Small piece of finely chopped bottle guard (dudhi)
1 small sized chopped beetroot
Some chopped pumpkin (small pieces of kaddu)
3 chopped tomatoes
Some chopped onion
Small piece of chopped carrot (gajar)
2 garlic cloves
Salt as per taste
1 cup water (or more if required)
2 spoon parmesan cheese
Bread slices
Some crushed black pepper
1 lime juice (optional)
1/2 tsp sugar (optional)

Method :
Heat up the pressure cooker, add 1/2 tsp butter
Add 1/2 spoon cumin seeds (jeera for flavour)
Add a small piece of finely chopped bottle guard (dudhi)
Add 1 small sized chopped beetroot
Add some chopped pumpkin (small pieces of kaddu)
Add 3 chopped tomatoes
Add some chopped onion
Add a small piece of chopped carrot (gajar)
Add 2 garlic cloves
(Add vegetables as per your choice & for thickness you can also add moong)
Add salt as per taste and mix it
Add 1 cup water, cover the lid and cook up to 2 whistles
Further to make cheesy croutons, heat up the pan
Spread 2 spoon parmesan cheese on it
Apply some butter on bread slice and place it on cheese
Press gently and roast for 5 mins on medium flame
Roast until it turns golden-brown from both the sides
Cut it into small square pieces
Now let the vegetables cool down, churn in mixie and make fine puree
Seive with food strainer and pour soup into pan
Add some water (if required as per its consistency)
Also add salt as per taste (if you add water)
Add some crushed black pepper
Add 1 lime juice (optional)
Add 1/2 tsp sugar (optional), mix it and turn off the stove when it starts boiling
Take it in a serving bowl
Top with some cheesy croutons (inserted in a toothpick)
