    Mini Pancakes or Waffles

    1 banana
    2 eggs
    1 tablespoon whole wheat or gluten free flour
    ½ tsp baking powder
    ¼ tsp cinnamon
    ½ tbsp chocolate chips
    ¼ cup berries to serve
    ¼ cup Greek yogurt or cottage cheese for additional protein (optional)

    Mash banana in a bowl. Whisk in 2 eggs, flour, baking powder and cinnamon to combine and add chocolate chips. To make pancakes, spray a pan, spoon 2-3 tablespoons of batter and cook for 2-3 minutes. Flip and finish cooking for 2-3 minutes on the other side. To make mini waffles, spray the mini waffle maker and spoon 2-3 tablespoons of batter at a time. Close and cook until you smell the cooked pancakes, about 2-3 minutes. Serve with berries and enjoy.

    These are similar to the @2bmindset banana egg pancakes but the extra flour and baking powder makes a big difference. I highly recommend trying it!
