  1. Iโ€™ve just made this for the 3rd time – fab recipe, thank Akis. As we all know, itโ€™s very important to take a vitamin D supplement which ideally should be taken in the morning with fatty food… I take it with a teaspoon of extra Virgin Greek olive oil ๐Ÿ‘๐Ÿป

  2. Akis for this one… let's call it Greek minestrone, okay? Can we agree on that? I have never seen something like this in my entire life. Besides we don't use stock to make minestrone… only water. And we normally cook it for about 2 hours. We also like to use cabbage in it, and no zucchini… it is a winter recipe: zucchini aren't available in winter (well they are in greenhouses of course, but it is not in season and therefore it is not used for our soups)

  3. A lovely vegetarian version of Minnestroni!
    I fry Italian sausage, garlic, tomatoes in a skillet, add uncooked pasta to that to get their flavor, add it all to the soup. Very delicious. Also any robust leafy greens (chard, kale, spinach) works for me for the greens at the end.
