White Chicken Chili Recipe
1 tablespoon oil
3 medium skinless, boneless chicken breasts
4 cups chicken stock or broth
1 clove garlic minced
1 medium onion diced
1 (15-ounce) can white beans, drained
1 (4-ounce) can diced green chilis, with liquids from chilis
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon pepper
Add chicken to a 4-quart, heavy bottomed Dutch oven or stockpot over medium heat. Add chicken stock and cook until tender, about 15 minutes. Shred chicken with two forks and then add back to the liquid. Pour remaining into a large bowl.
Next add 1 tablespoon oil to Dutch Oven and wait until oil starts to warm up for 3 minutes, then add onions and stir occasionally until the onions are soft. Then add the garlic for 30 seconds. Add your green chilis and spices stir to combine.
Simmer over low heat for about 5 minutes. Remove from heat and serve.
Then add the chicken broth, chicken and white beans. Bring to a boil then reduce to simmer and cover for 30 munutes or until beans are soft.
Serve with tortillas and avocados

My name is Regina. I am 57 years old and currently disabled. I need to loose 200 pounds in total. But to begin with I need to loose 100 pounds to get knee surgery on both my knees. I have don’t have cartilage and this makes it impossible to walk without a walker and unfortunately I can’t go far. I mainly use a wheelchair to help me get around. My goal is to get out of this wheelchair by loosing the weight and finally getting the surgery!
The second 100 pounds is to get my diabetes and high blood sugar finally under control.
My journey will take time. I want to learn healthy eating habits for life. I will use fitness pal and regular gym workouts to learn eat healthy and move my body. I don’t want a quick fix, by using fad or restrictive diets. My diet will consist of whole foods, lots of lean meats, fruits, vegetables and lots of water, but occasionally I know that realistically I can have that occasional treat. I want to focus on living my best life and enjoying the journey along the way.
