Chef Ohm Suansilphong from Fish Cheeks in NYC makes a warming hot and sour Thai soup, Tom Yum. This soup begins with a lemongrass broth, fortified with shrimp heads and lime leaves, that then gets seasoned with fish sauce, chili jam, cream, and more. It’s served with vermicelli noodles and shrimp, resulting in a sweet, sour, savory, and spicy seafood soup that hits all of the right notes.   1. Everyone commenting on here about uncle roger and how he would disapprove of chili jam need to fundamentally understand what chili jam is in a Thai context. Uncle roger was not referring to Thai food when Jamie used it in his videos. Chili jam in a Thai context aka nam prik pao (น้ำพริกเผา) is a Thai chili paste based on dried chili’s, shallots, garlic, and dried shrimp. It is most often seasoned with palm sugar, tamarind and fish sauce. It is primarily a sweet seasoning, as the ratio of sugar in it is almost always higher than any of the other seasonings. Tom yam soup does not always contain nam prik pao, it’s up to the chef. Also it rarely contains coconut milk either unless you’re looking at historical recipes and I would guarantee that no one that is commenting here reads old recipes or else they wouldn’t comment. Lastly, those who are giving Ohm shit about using half and half need to understand that he is making a version here that is based on a Tom yam that is In the style of Nahm kohn (ต้มยำกุ้งน้ำข้น). This style is more modern and most often uses evaporated milk, so his choice of half and half is fine. The other version of Tom yam is nahm sai which is the clear style and often doesn’t contain chili jam (ต้มยำกุ้งน้ำใส). And on a final note – the reason he specifically says don’t substitute galangal is because 9/10 videos or publications including major celebrities tell you to substitute ginger for galangal. And those who say Tom yam
    isnt Tom yam without galangal should again check out historical Thai cook books where there were indeed Tom yam soups with only lemongrass and makrut lime leaves. The constant spread of bad information must stop. Respect to chef Ohm and all of you people should go to Fish Cheeks and support.
