Low Carb Tortillas – 2 Ingredients

Tara’s Tortillas

1 head cauliflower
2.5 – 3 cups shredded mild cheddar cheese
1 egg white

Process cauliflower in food processor to the texture of rice or grits.

Microwave cauliflower for 10 minutes, covered, stirring half way through.

Squeeze out cauliflower in cheesecloth until liquid is removed.

Add cheese, stir and microwave 1-2 minutes or until cheese is melted.

Stir in beaten egg white.

Spread on parchment in thin rounds about 8” in diameter.

Bake at 400 degrees for 12-15 minutes.

Transfer to a spoon handle or rolling pin to and allow to cool in the shape of a taco shell.

Enjoy!

  1. Ok so the cauliflower one was nice but WAY too much work! I found this recipe online for zucchini taco shells- soooo easy! I have made them about six times and they are perfect every time. You just squeezed the zucchini after shredding no biggie. Add some cheese and spread it on the silicone mat. I don’t even try to fold them into taco shape because they don’t get real hard but they’re crispy enough and they have a great flavor. I do add a little bit of garlic and seasonings to the shells but this is the recipe and it is just awesome. To me it’s the perfect mix between the ones that you have tried here!

  2. I have found another version that really works for us- like the cauliflower ones but no need to microwave & squeeze hot cauliflower! Soo easy and we love them! Just grate & squeeze out the zucchini- uses much less cheese, I just lay them on our plates & we can fold them as we eat but they are not as pliable as ketoconnect’s
