I've done these a buncha times and they are really good, definitely the best keto french fry out there. A variation with the dough I've done a few times was use half almond half lupin flour and added a bit of baking powder to the dough. rolled it into about a half inch thick log and cut them up like gnocchi. used a fork to make the grooves in them then boiled them. that was actually really good too.
I tried these a while back, sorry they don't taste like French Fries and actually taste pretty rank, IMO. I found a really good option though; very simple and doesn't seem to spike blood sugar levels; slice celeriac into chip shapes, boil in water (only, NO salt or the celeriac gets droopy) for 5 minutes, then put on greaseproof paper (ideally on a baking grid) and coat with spray oil; cook in oven for about 40-50 minutes in oven at about 210 celcius. The chips taste better than potato chips, are rigid like chips; tasty and healthy. Give them a go, you'll be pleased you did! Plenty of flavour so little need for ketchup or even salt.
I needed 2 pieces of parchment paper to roll it out too!
They were great! I haven't tried the coconut flour ones yet.

I add garlic powder and salt and onion powder my daughter uses ranch seasoning! Vernaz makes an empanada dough with this!
This dough is a great base for so many things. Chips, donuts, pizza crust, you can pretty much make anything sweet or savory from it.

Add some truffle oil, MAGIC LOW CARB TRUFFLE FRIES, add a garlic aioli, perfection.
I sprinkle some almond flour on the rolling pin and dough and it rolls effortlessly. No sticking. I also don't add as much water as you did. I think that added to the stickiness. These are great! 👍😊

Happy to see you make this video Wes. I have watched both Heavenly Fan and Keto Focus' video. I was intrigued by Keto Focus' suggestion of potato extract (which I didn't even know was a thing). But my first thought was making up a batch of french fry seasoning to add to the dough. I used to enjoy (potato) seasoned fries way back in my preketo days 😋

Just made these! Added salt and onion powder to the dough and fried with lard…and they are good! I think i put a little too much onion powder to them ..they taste a lot like hush puppies! Still good as far as I'm concerned. Even put a small dab of beef broth base in the water…this really turned out some flavor.
Imagine these fried in tallow like McD's did back in the day. Drool.

Wes, I made these last night with almond meal (she says ground almonds, and that almond flour makes them more dense). I used the mashed potato flavor. But the almond meal is much more rustic, and I didn’t taste the mashed potato flavor. They were great with low carb ketchup, but I would use almond flour next time.
Really adds a special happiness to our side dish!

So I just used the dough in my dash mini waffle iron…used parmesan on bottom and top, flattened the dough..OH MY WORD!!! Half the work and WAY crispier!!

I don’t know what potato fries you all have been eating, but these taste nothing like potato fries. They literally taste like mini bread sticks. 😆 I did both the air fryer version and cooking in oil version. Nope. I wished so badly it tasted like fries, but it truly doesn’t for me.

Since they’re sticky prior to cooking, I wonder about making “seasoned fries” and rolling them in a seasoned crumb mixture (pork rinds/nutritional yeast/ and “shaky cheese” aka green can parmesan, plus some herbs/spices) before cooking. Yum. When I used to make traditional fried chicken I always fried extra clumps of seasoned flour because that was my favorite part. Lol

How crazy is it that today for lunch (I live in France so it was 10 hours ago) I wanted to make them (I've already have, both versions) and looked at your channel to see if you did make them at some point, I don't know why, just to have your opinion! And 8 hours later you uploaded your video! That's really insane xD I prefer also the almond ones because I could feel too much the coconut flavor, even with seasoning. So today I tried mozza sticks and I failed miserably, maybe one day you can do a video on keto mozza sticks? Anyway, for the fries, I'll do a combination of both next time! Love your videos!
