  1. I love all your videos! But this one makes me a little sad. I can tell you've only ever had the plainest of plain cheesecakes. (Kind of like saying you don't like cake, when the only thing you've ever had was plain yellow cake with nothing on it.) You've never experienced any of the more decadent varieties, like a fudge mousse, or salted caramel, or triple berry,, or white chocolate macadamia, or tiramisu, or brandied black cherry, or praline pecan, or pumpkin spice, or peanut butter cup, or rocky road…. I'd suggest looking over the Cheesecake Factory menu for inspiration and experiment with your own keto versions.

  2. To keep the sides of a cheesecake from sticking to the springform pan use a parchment collar. Cut a strip of parchment a little bigger than the circumference of the pan. Grease the sides of the pan with Crisco or spray with oil and the collar will stick to the inside of the pan. The cheesecake will not stick.

  4. I have never known a recipe for a cooked or baked cheesecake. Since I was a kid in the sixties a cheesecake has a base of crushed cookies (for those in the USA, biscuits elsewhere) which can be plain or ginger flavoured mixed with melted butter and pushed into the springform tin or pie plate. The filling is cream cheese, marscapone is best or Philadelphia, plain or or mixed with fruit for taste, chilled in the fridge then eaten. No eggs or flour, no baking. Quick, easy, healthy, tasty, yummy.
    These sound nice but I'll stick with the non bake recipe for easy cooking.

  6. I'm ALSO not a huge fan of cheesecake, however, if its super easy and good, AND keto…I'm in. I will definitely try your recommendations, however, I made Gunajan's 1 minute microwave keto cheesecake for two and it was REALLY impressively good. So much so that my husband asked for another one last night. And….he doesn't love cheesecake either.

My trick for cheesescake is to cook it for 10 mins @500 degrees, turn oven down to 200 for an hour, & then turn oven off- do not open the door- & leave it to cool down in the oven for another hour. That being said, I make HUGE cakes, using 3lbs of cream cheese in the 12" springform, & definitely New York style- firm, not custard-y, more like a cut w/a fork & serve w/strong coffee type of cheesecake. We prefer a nut crust & strongly vanilla, plain cake~ YUM.

  8. *Cinnamon is often paired w/anything blackberry, in my experience. Not a big cinnamon fan myself, but I have to agree when it comes to blackberry dishes- I just cut it in half for my taste. Never thought about the idea of "graham cracker flavor", but that makes sense too.
