Ingredients:
3 cups chicken stock
1 (12-oz) low carb beer
½ cup heavy whipping cream
2 teaspoons xanthan gum
6 slices cooked bacon, crumbled
12 ounces shredded cheddar
1 tablespoon butter
½ cup diced onion
2 cloves garlic, minced
½ small red bell pepper, diced
1 tablespoon Dijon mustard
1 teaspoon celery salt
1 teaspoon black pepper
½ teaspoon paprika

  1. Looks great, definitely gonna try it soon. But here's my "note:" Increase butter to 2 tbsp, maybe 3. Double the total amount of bacon used; use a chef's knife to mince half of it very fine, like garlic. Melt butter to start, but before the onion, throw in the minced half of the bacon. Sauté the bacon on low for about 7 – 10 minutes or so. Then, increase the heat to medium and carry on with the recipe exactly as you have it here. This infuses the butter with bacon flavor which then permeates the whole soup, rather than only tasting the bacon garnish. Enjoy!

  2. Look … One month on Youtube, seeing all keto-friendly cooking stuffs … You are BY FAR the best ! Just a lil issue for me (Frenchie …) ; the "cup" stuff … Please please please would you putt weights in grams on the description for all your recipes ? Because it's very hard to make those fabulous recipes to me without this datas … Thanks a lot, with or whitout the weights anyways !
