I make this similar to how you do it, but I add equal amounts of vinegar and water up to the top of the veggies and about three packs of Splenda or Equal to cut the tartness of the cider vinegar, plus some S & P. I use sliced English or Persian cucumbers and don't peel them. It does taste better after a day marinating in the fridge and it keeps for several days.

  2. That there is what we call COT Salad, C-ucumbers, O-nions, T-omatoes.
    There's several ways I change mine up.
    -Peeled cucumbers, onions, tomatoes, garlic powder, salt, pepper, mayo and buttermilk, but some times add chopped bacon. (Like slaw dressing)
    -Peeled cucumbers, onions, tomatoes, homemade Italian dressing, basil, parsley, salt and pepper.
    -Peeled cucumbers, onions, tomatoes, fresh parsley, sumac, lemon juice, salt and pepper.
    -Some times just plain ol' peeled cucumbers, onions, tomatoes, salt and pepper.
    -When fixing it for younguns that don't enjoy the strong taste of raw onions, I'll use peeled cucumbers, green onions, tomatoes, salt and pepper.
    This is one of them million and one ways to make it salads and they're most all good.

  3. My family, starting with my Nana has made this but with much more vinegar and sugar (or honey) and allowed it to sit overnight so the flavors can penetrate the cucumber, tomato and onion(preferably vidalia). It is amazing that way. Add creamed corn and such a light spring dish.
