Ingredients –

1kg (2.2lbs) – Baby Potatoes (Waxy Potatoes)
30g (2 1/2 tsp) – Wholegrain Mustard
50ml (2 1/2 Tbsp) – White Wine Vinegar
1 – Shallot, Finely Diced
60ml (1/4 Cup) – Extra Virgin Olive Oil
60g (3 Tbsp) – Mayonnaise
20g (1 Tbsp) – Horseradish Cream
40g (2 Tbsp) – Sour Cream
1/4 – Lemon, Juiced
200g (7oz) – Streaky or Middle Bacon, Diced
2 – Spring Onions (Scallions), Thinly Sliced
Seasoning To Taste

  1. Your creation is great an I really enjoy horseradish, I would never have thought adding it to potato salad. Now I have another use for horseradish.

  2. Oh Jack – I love a good potato salad and my “famous within our circle of family and friends” recipe is a mainstay at Christmas and bbq’s. Sadly this year our kitchen reno was not quite done (still minus tiles and appliances) so I was unable to cook. We don’t even have a bbq right now as we got rid of our old one with plans to buy one in the Boxing Day sales. So this year I asked my son to grab a couple of salads from a chicken shop to supplement the salads, ham and seafood we were serving in lieu of being able to cook. The potato salad he bought was by far THE WORST we have ever had and most of it ended up in the compost. I’m not sure the worms are even going to go for it 😂😂😂 Looking forward to my lovely new Smeg range being connected to the gas and electricity (needs hard wiring) in the next week or so after using a microwave, sandwich press and toaster for the past 6 months.
