Healthy eating is balancing greens, poultry and minimal seasonings. This lettuce and
egg salad is one of those.. do try !
LETTUCE AND EGG SALAD
10-15 assorted lettuce leaves
Salt to taste
½ tsp white pepper powder
½ tsp crushed black peppercorns
2 tbsps white vinegar
1 tsp mustard powder
2 tbsps extra virgin olive oil
1. Pour some water in egg boiler, arrange eggs and cook for 10 -12 minutes. Alternately, cook eggs in boiling water for twelve minutes. Transfer in a bowl of water and allow to cool.
2. Peel and cut into bite sized pieces.
3. To prepare the dressing take salt in a jar. Add white pepper powder, crushed black peppercorns, vinegar, mustard powder and extra virgin olive oil. Close the lid and shake well.
4. Tear lettuce leaves roughly and add to the bowl. Add chopped eggs and drizzle prepared dressing. Mix with light hands.
5. Transfer in a serving plate and serve immediately.
