Easy Lentil Soup Recipe: Ingredients

1 cup dried green or brown lentils, rinsed and drained
1 onion, finely chopped
2 carrots, peeled and diced
2 celery stalks, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/2 teaspoon ground coriander
1/4 teaspoon red pepper flakes (adjust to taste)
6 cups vegetable or chicken broth
1 can (14 oz) diced tomatoes (with juices)
Salt and pepper to taste
2 tablespoons olive oil
Fresh lemon juice (optional)
Fresh parsley or cilantro, chopped (for garnish)

Instructions:

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables start to soften.

Add the minced garlic, ground cumin, ground turmeric, ground coriander, and red pepper flakes. Sauté for an additional 1-2 minutes, until fragrant.

Add the rinsed lentils to the pot, along with the vegetable or chicken broth and diced tomatoes (with their juices). Stir well to combine.

Bring the soup to a boil, then reduce the heat to low. Cover and let the soup simmer for about 20-25 minutes, or until the lentils are tender.

Once the lentils are cooked, use an immersion blender to partially blend the soup, leaving some chunks for texture. If you don’t have an immersion blender, you can carefully transfer a portion of the soup to a regular blender and blend, then return it to the pot.

Season the soup with salt and pepper to taste. If desired, add a squeeze of fresh lemon juice to brighten the flavors.

Serve the lentil soup hot, garnished with chopped parsley or cilantro. .
