Lentil and Veggie Soup | Easy & Fulfilling Plant Based Recipe

This is our favorite lentil soup recipe! It’s easy to make, comforting and full of flavor!

To get started with this recipe in a large pot add some avocado oil ( or any cooking oil of choice)
We then added some chili flakes to spice it up but this step is optional
Once the pan begins to warm up add in the following chopped vegetables:
1 Brown Onion
1-2 Roma Tomatoes
1/2 of a Small Green Cabbage
1-2 Small Golden Potatoes
1 Yellow Squash
1/2 of a medium size Green Bell Pepper
1 Leek
Once you have added in the chopped vegetables fill the pot with 8 cups of spring water ( You can add more water if you like your soup with lots of juice)
For seasoning we used the following seasoning blends:
Seasoning Salt
Onion & Herb
Italian
Cajun Style
We also added in 1.5 cups of lentils

Order these seasonings on our website at

Cook for 25-30 minutes on a medium high heat until the lentils are soft but still hold their shape.
Once the soup is finished cooking we topped off our bowls with fresh the following fresh herbs:
Cilantro
Green Onions
Fennel

Enjoy!
