  1. Chef John has done oven baked that were crispy. I think he used baking powder on the wings and let them sit a bit before baking. That said, frying is more consistent, IMO. They say peanut oil is best, I use canola. Olive oil is expensive here as is ghee and olive oil doesn't have as high a smoke point the other two. Anyway, I like your recipe. It's fast simple and tastes good.
