Ladyfinger Cookies Ingredients
2 egg whites
50g allulose sweetener
1 teaspoon lemon juice
2 egg yolks
30g allulose sweetener
1/4 teaspoon vanilla extract
30g lupin flour
30g vital wheat gluten flour
30g whey protein isolate powder
1/4 teaspoon baking powder
Cream Filling Ingredients
200g thickened or whipping cream
125g mascarpone cheese
1 teaspoon vanilla extract
20-30g allulose sweetener
Freshly brewed coffee
allulose sweetener (adjustable to your preference)
1 Tablespoon of dark rum (optional)

Can I substitute whey protein isolate with something else? Like almond flour or oat fiber? And also can I use monk fruit sweetener instead of allulose?

Hi…Wow…looks amazing! QUESTION: What size dish did you use? It looks like you had more ladyfingers than you needed in the final dish. How many did you end up using? (I'm sure any extra ladyfingers would be scrumptious all by themselves with a good cup of tea or coffee.)
