  1. So just sitting here eating this so much comfort soup. OMG just love it. Never had chayote squash before and wow worked perfectly for potatoes sub. I did not have fresh red peppers but did have a jar of roasted red peppers in jar, yummmers actually prefer it. I know this will even more fabulous the next day a soups and stews are always even tastier, looking forward to it. Thank for another slam dunk dinner for me and dad.😘

  2. Alright! Now we are talking! Another recipe with Chayote! Vegetable Pear in the Louisiana area. Cajun folks use it a lot! Don't be so quick to discard the center seed. They too are tender and delicious. We cook with Chayote a lot here. You should see where it is grown. Whole mountain sides are covered with the vines and there are arbor like tunnels for the pickers to walk in and reach up and pick them. There is also a more original Spiney version and even a White one! I love it with Scrambled Eggs and it has long replaced potatoes in all my other soup recipes. I am not familiar with Zuppa Toscana. Thanks for the introduction. I have been meaning to go get additional bacon, so now is the time. As always. I will let you know how it goes.
