  1. Could not find fresh Thai basil so I grow it myself. I use a lot of it. I learned, from a Madhur Jaffrey television cooking series, to take the largest leaves and fry them quickly for seconds in oil to make them crisp and translucent like stained glass. Do this at the beginning and use the same basil fragrant oil to cook the dish. The lovely fried leaves are used as a garnish on top of the dish and are delicious.

  2. that does look good…and i really appreciate you sharing because it's a dish i really really miss ! but it does need more pepper, lol. and rice… i miss rice so much, lol! still, i'll try to make it and eat it on some lettuce and see what happens, lol.

  3. I didn't know soy sauce was keto. Now i can make a lot recipes I thought that were forbiden for me just because of that ingredient. What about "salsa inglesa"? (sorry I don't know the name in English, I'm mexican and sometimes it's difficult for me to translate ingredients.

  4. PAT KAPAOW!! Its one of those things that are eaten all over Thailand! There are many variations of this, but they all taste good!….and of course a fried egg on top….KAI DAO!!

    Also pork, beef and seafood are used on request!!

    As a sauce, a splash of water is added at the end…..and no salt! Only fish sauce!

  5. We make a similar dish that is a family favourite now, can be eaten with coconut rice/cauliflower rice, also my non keto partner eats it stuffed in steamed sweet Thai buns.

    We don't use soy but use oyster sauce instead and we up the chilli, garlic, Basil ratio significantly. It is divine, a definite mouthgasm!

  6. The egg looks wonderful. 🙂 I noticed that once I went Strict Keto, my mouth & tongue do not burn as badly by spicy foods now. I think the elimination of sugars and carbs cut down all my allergies and inflammatory reactions both externally and internally. 🙂 I use to be at zero tolerance to any chilies spices. Now I can enjoy some like you today. 🙂
