3 INGREDIENTS SHORTBREAD RECIPE!

This is super easy and fun to bake for the holidays 🙂
With your basic keto baking ingredients, you can have crispy and buttery shortbread cookies just like the actual ones!

Keto Shortbread Cookies

(Makes approximately 25 cookies)

Ingredients:
– 100g Unsalted Butter
– 50g Erythritol (Granulated)
– 140g Almond Flour

1. Preheat oven to 320F
2. In a medium bowl, whisk butter until pale and fluffy.
3. Add erythritol and mix well.
4. Sift in almond flour and mix with spatula. Do not over mix!! Just enough to incorporate all the ingredients.
5. Use a piping bag (I use Wilton 1M piping tip) to divide the dough on a baking sheet, or simply use parchment lined brownie pan and spread the dough evenly.
6. Bake for 12-15 minutes until the bottom is lightly brown.
7. Let it cool completely on a cooling rack.
* It will be super soft fresh out the oven, so make sure you let it rest until fully cooled to get that crispy texture.
8. Serve and enjoy!
