4 large egg yolks
1/2 teaspoon (2g) xanthan gum
1/3 cup (35g) unsweetened cocoa powder
3 tablespoons (43g) unsalted butter, cut into pieces
1/2 teaspoon (2g) vanilla extract
•Whipped Cream Topping•
1 cup (240ml) heavy whipping cream
1/4 cup (45g) powdered erythritol
1/2 teaspoon (2g) vanilla extract
1 tablespoon (7g) unsweetened cocoa powder
1/2 ounce sugar free semisweet dark chocolate shavings

I am not sure what happened but the chocolate pudding part wouldn’t thicken after several mins of cooking on low heat. Even after refrigerating overnight it was still runny. Everything tasted amazing but I am puzzled why the pudding didn’t set up. Thank you!

This was an excellent desert. First one of yours that I made. I made it at night, in an attempt to take to my parents for Christmas dinner, and my whipped cream kinda lost its whipped-ness. Is that normal? I also, didn't tell my parents what it was called, lol. But, again, this was so good. And it freezes well, with just about a 15 second defrost in the microwave.
