  2. It's only healthy if you eat keto foods without carbs. You should eat less than 20-50 grams of carbs per day to stay in ketosis. The potato will kick you out of ketosis. So at that point you are eating the fats but not burning the fats for fuel. Which is why you are just eating chicken and cheese with no weight loss benefits.
