The consistency of this finished dish is on the custard side, with a rich cheddar sauce and just a hint of heat from ground cayenne pepper. If you aren’t a fan of the spice, simply omit it but it adds a nice balance to the dish.

1 pound pork sausage
2 cups zucchini, diced
2 cups green cabbage, shredded
½ cup onion, diced
3 large eggs
½ cup mayonnaise
2 teaspoons yellow mustard, prepared
1 teaspoon ground sage, dried
1 ½ cups cheddar cheese, shredded and divided
Cayenne pepper to taste

  1. Made it last night, but substituted chopped frozen spinach instead of the cabbage and it was absolutely delicious. Also had a little green pepper and red pepper in my garden that needed to be used, so chopped about a tablespoon of each and added to the saute. My hubby, who is not following Keto lifestyle, came home and raved about how great the "casserole" was after a long day! Try it for sure.

  2. …loving this recipe. I just began Keto last week so this is making it very simple to follow. I substituted some items because I did not have plain pork sausage, cabbage, and enough cheddar cheese. I used Italian sausage, spinach & 1/2 cup of mozzarella cheese. I’m so amazed how very good it turned out…also did not have sage so I left it out. Thank you so much for all your wonder work to help people. There is such an obesity epidemic here. I became a believer when I saw my nephew and his wife about 2 months ago. They started Keto in Nov or Dec and they look fabulous now.

  4. I was just wondering, that sausage you used, is that just ground pork/pork mince? Your “sausage” in America is different to ours in the UK and I’m trying to work out the rest of the ingredients in the meat you used. I LOVE your videos! Thank You for all your hard work.xx
