I loved my old King Ranch Chicken recipe and have been trying to convert it to keto ever since I’ve been on this way of eating. I knew when I came up with a good tortilla recipe the rest would fall into place. Now that I have that tortilla recipe, I am happy to say I now have the keto version of King Ranch Chicken! I hope you enjoy it as much as we do!

Ingredients:
3 cups chicken, cut up in bite-sized pieces (raw or cooked)
1 cup chicken broth
2 tablespoons butter
½ small onion, diced
1 medium red bell pepper, diced
1 tablespoon red chili powder
1 teaspoon cumin
1 teaspoon garlic salt
4 ounce can chopped green chile
6 ounces tomato salsa
½ cup heavy cream
1/3 cup sour cream
16 ounces grated jack cheese
6-7 homemade tortillas

    I NEED I make these tortillas!
    But, if you leave out the tortillas, you could still bake the dish, or crock pot it, and use it as a dip with keto chips, pork rinds, sliced veggies…. Yum! Living right next to the King Ranch, I sure have missed King Ranch chicken! Lol
    I think this is in my near future! Thanks!

I already LOVE your tortilla recipe, and I use it for Keto enchiladas, quesadillas, ham, pickle and cream cheese wraps, pb and cocoa wraps, etc. Thank you for another great recipe! I also love that you get right to making the recipes with not talking. I have all of your pdf cookbooks, and they have made doing Keto something I can actually stick to, since I've battled with my weight all of my life. Thanks again!!!
