KETO PUMPKIN MUG CAKE | One minute low carb cake | Keto Pumpkin Recipe


Pumpkin everything season is in full effect and this keto pumpkin recipe is one you can make when you are having pumpkin cravings while on your low carb diet. Keto pumpkin mug cake can be made in minutes! So you don’t need to give into pumpkin temptations when you are on the keto diet. When you make mug cakes, you generally make them for one serving, but you can always double or triple the recipe to serve more or have some keto pumpkin cake leftover.

2 tablespoons almond flour
1 tablespoon coconut flour
2 tablespoons Swerve or sweetener of choice
½ teaspoon baking powder
½ teaspoon pumpkin pie spice
Pinch of salt
2 tablespoons butter, melted
2 tablespoons pumpkin puree
½ teaspoon vanilla
1 egg

Mix together dry ingredients in a bowl or mug.
Add in wet ingredients and mix until combined.
Stir in egg and mix until just combined.
Pour into greased ramkin or mug.
Microwave for 50 – 75 seconds until cake is firm on top.

  1. I made this last night with cream cheese frosting and omg its the best pumpkin anything i have EVER had sugar or not. I’m gonna try to make a batch by increasing every thing 3 times or 4. And baking in the oven. I don’t want to use any other recipe so wish me luck. My mouth is watering already.

  2. That was delicious. It was incredibly moist. I added some maple extract and put a bit of cream cheese frosting on top. I think I’ll add a bit more pumpkin spice next time, but it’s one of the best non-chocolate mug cakes I’ve had.
